Decaf El Tablon Colombia
Perhaps blasphemous to some, our Decaf produces an excellent cup that doesn't leave you to miss the flavor of our other beans. The beans, before being decaffeinated, go through a Washed process. They are dry fermented for 12-24 hours, then dried on raised beds for 12-15 days.
The "Sugar Cane Process" is a natural processing technique used to decaffeinate coffee beans. The sugars from sugar cane are mixed with compounds commonly found in beer and wine. This is mixed with green coffee that has been previously steamed to soften and expand the seed, and circulated until at least 97% of the caffeine is removed. Finally, the coffee is vacuum dried, until the moisture content gets to somewhere between 10-12% of what it was prior to being processed.
